Vegetable Stir Fry

Ingredients:

  • 2tbsp of olive oil
  • 1tsp of salt
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 1 carrot, chopped
  • 1 red bell pepper, chopped
  • 1 courgette, chopped
  • 3tbsp of low-salt soy sauce

Method:

  1. CHOP (PICA) all your VEGETABLES (VERDURAS).
  2. Heat a wok, or a pan, on a high heat and add olive oil.
  3. Add the chopped ONION (CEBOLLA) and GARLIC (AJO), and stir-fry for 1 minute, then reduce the heat.
  4. Add the chopped CARROT (ZANAHORIA), RED BELL PEPPER (PIMIENTO ROJO), and COURGETTE (CALABACÍN) and stir fry for 5 minutes.
  5. Stir all the ingredients with a wooden spatula and keep them moving around the wok.
  6. Add 1 tablespoon of water and the SOY SAUCE (SALSA DE SOJA).
  7. Cook over a high heat for 2 minutes.

Tip:

  • Serve stir fry with noodles, RICE (ARROZ), quinoa, or couscous.
